At first because of work schedules and some family living out of town we were going to postpone our Easter dinner until this coming weekend. Then all of a sudden, everything fell into place and we were able to have it on Easter Sunday. It’s always a blessing whenever our family can get together and we are all flexible to hold our celebrations whenever.
So on really short notice, I set the table and got it all pulled together. Nothing super fancy, but pretty enough and best of all, we will all be together. Since the living room is done in Blue and Yellow right now, I decided to do the table the same way.
A yellow tablecloth with tulips on it, a blue vase and some tulips and my crystal hurrican candleholders is about all the table will hold.
I’m conserving space, so no chargers, just the Gibson plates and the flower salad bowls from Pier One that I got on clearance a while back.
Since I only had 4 of each style napkin I used both styles and alternated them.
All of the places were set with the Gibson napkin rings that came with the set except for this place. This one is for my great-grandson and he gets the bunny napkin ring. He’s special
I’m using the bowl and platter from the Gibson set and a couple that I found at GW for the food. The little leaf plate will be for the butter.
Love this wonderful basket. It also came from GW and it keeps the rolls nice and warm.

Dinner was wonderful, we all had a great time and such a blessing to have family here once again. I had everything ready to go into the oven while we were at Church for the early service and when we got home I just had to finish things off with no hassel and plenty of time to have dinner ready by 1:00 PM.
We were blessed with Glazed Ham, Mashed Potatoes, Deviled Eggs, Green Bean Casserole, Corn, Steamed Broccoli and Carrots, Salad and Hot rolls. For dessert, we feasted on Chocolate Pie and Coconut Cake. The Lord truly Blessed us on this day.
Mary’s Cake – delicious with almond, orange, lemon, coconut and pineapple. Perfect for Spring and Summer.
1 1/2 cup sugar
1/2 cup shortening
3 eggs
3 tsp. baking powder
1 cup milk
1 tsp. vanilla
1/2 tsp. lemon extract or 1 tsp. lemon peel
1/2 tsp. orange extract or 1 tsp. orange peel
1/2 tsp. almond extract
Cream sugar and shortening, add eggs and beat well. Add rest of ingredients, beat well and pour into 3 8″ greased and floured pans. Back at 350 for 20 min. Test if done with toothpick. Do not overbake.
Frosting
3 eggs well beaten
2 cups sugar
small can crushed pineapple drained
1 cup coconut
1/2 cup finely chopped pecans optional.
Cook until thick, add 2 tablespoons butter, beat until butter melts. Cool and frost all layers.
