Foodie Friday – Bacon Quiche Lorraine

Today I am joining Michael @ Designs by Gollum for Foodie Friday.

Yesterday I showed you a tablescape for Sunday Brunch and said we would be serving Bacon Quiche. This is a favorite recipe that I love to use. The best part is you can have the bacon cooked in advance, the onions chopped and the cheese shredded , so when you come home from church it goes together in a snap. It is so good and I know you will truly love it.

Quiche Lorraine

Pastry for a 9 inch pie.

12 slices bacon, crisply fried and crumbled
1 cup shredded Swiss Cheese
1/2 cup fine chopped green onions
4 eggs
2 cups half and half
1/4 tsp. salt
1/8 tst. pepper

Sprinkle bacon, cheese and onion in pastry lined pie plate. Beat eggs slightly, beat in remaning ingredients. Pour egg mixture into pie plate. Cook uncovered in 425 oven 15 minutes.
Reduce oven temp. to 300. Cook uncovered until knife inserted halfway between center and edge comes out clean, about 30 minutes longer. Let Stand 10 minutes before cutting. 6 generous servings.

This recipe is from Better Homes and Gardens Cookbook, dated 1982. It really does have some really good basic recipes. I use it all the time along with my 1953 American Woman Cookbook.
