I am thrilled to be joining Michael at Designs by Gollum for the Egg-xellent Spring Foodie party. This has been such a fun grouping of parties and nothing could be better than to top it all off with food.
This is another one of those really easy meals to put together and oh so good. Your family will think they are eating a fancy gourmet treat. Easy Stuffed Peppers.
One pound of ground round, a can of cream of mushroom soup, chopped onions and bell peppers.
I am only making 2 large stuffed peppers, however you can make 4 medium ones with one pound of ground round. Mix in one egg, 1/3 cup chopped onions, pepper and garlic to taste and 1/2 can cream of mushroom soup. Fill cleaned -decored peppers and place them in a deep baking dish.
I used 2/3 of the ground round for the 2 of us and have 1 patty left over which I will freeze for another meal.
Fill the 1/2 can of left over cream of mushroom soup with water or milk and stir well.
Pour over the stuffed peppers. Cover with foil or a glass cover and bake in the over at 425 for 1 to 1 1/2 hrs. Peppers will be soft and meat mixture will be well done.
I put a couple of potatoes in the oven at the same time to bake and finish the meal off with a veggie. Prep time is about 10 minutes, so this is one of those great meals to put in the oven and forget it. There will be enough gravy from the soup to spoon a little on the potato too. So good.
