Almond-Orange-Coconut-Pineapple Cake

This  is one of the best cakes I have ever had and I cook it often.  One of my readers asked about the recipe the other day, she had made it before and loved it, but now couldn’t find the recipe, so I thought I would post it again in case you didn’t see it the first time.  Such a light cake and perfect for summer with all the citrus flavors.  I am sure it will become one of your favorites too.

Mary’s Cake – delicious with almond, orange, lemon, coconut and pineapple. Perfect for Spring and Summer.

1 1/2 cup sugar
1/2 cup shortening
3 eggs
2 c. flour
3 tsp. baking powder
1 cup milk
1 tsp. vanilla
1/2 tsp. lemon extract or 1 tsp. lemon peel
1/2 tsp. orange extract or 1 tsp. orange peel
1/2 tsp. almond extract

Cream sugar and shortening, add eggs and beat well. Add rest of ingredients, beat well and pour into 3 8″ greased and floured pans. Back at 350 for 20 min. Test if done with toothpick. Do not overbake.

Frosting
3 eggs well beaten
2 cups sugar
small can crushed pineapple drained
1 cup coconut
1/2 cup finely chopped pecans optional.

Cook until thick, add 2 tablespoons butter, beat until butter melts. Cool and frost all layers.
