I love easy meals and meals that I can make to feed a crowd. I love light and easy Oriental style meals and this recipe fits the bill perfectly. The Honey Teriyaki flavor will be a crowd pleaser for sure.
This is a recipe I found at The Recipe Critic and modified just a bit for our taste.
Slow Cooker Honey Teriyaki Chicken
Ingredients
4 boneless chicken breasts –
( I started with 2 really large chicken thighs and 2 chicken breasts. I like the mix of dark and white meat.)
1/2 c. soy sauce
1/2 c honey
1/4 c rice white wine
1/4 c chopped onion
2 minced garlic cloves
1/4 tsp pepper
3/4 tsp ground ginger
1/4 c water
3 tbl cornstarch
brown sugar
Optional garish – chopped green onions, sesame seeds, sliced almonds
Instructions
1.Spray slow cooker with cooking spray and place the chicken in the bottom. In a small bowl whisk the soy sauce, honey, rice wine vinegar, onion, garlic, pepper and ginger. Pour over the chicken.
2. Cook on high for 3-4 hours or low for 4-5 or until chicken is cooked throughout and shreds easily. Once the chicken is cooked, remove with a slotted spoon and shred on a plate.
3. Pour the sauce into a medium sauce pan. In a small bowl, whisk together the water and cornstarch. Slowly whisk into the sauce on medium high heat. Continue to whisk and let it boil until the honey teriyaki sauce starts to thicken. About 2 minutes. At this point taste. I wanted ours to have more of a sweet flavor and not quite so tart, so I added a couple tablespoons of brown sugar and stirred in thoroughly. Taste and add more brown sugar if needed to taste.
4. Add the chicken back to the slow cooker and pour the sauce on top stirring to coat all the chicken well.
Serve over rice
and garnish as desired.
