I love a great roast, but sometimes I just want something different. When I find that I have several roasts in the freezer, time to switch things up. For just the two of us a big roast is way too much and we love leftovers, but not several days in a row. This is when I cut one in half and make two different meals. Easy Barbecue Pulled Beef and Beef Onion Pepper Stir Fry are two of our favorites.
Easy Barbecue Pulled Beef.
1 3-4 lb rolled roast (or any chuck roast)
1 bottle BBQ sauce (your favorite)
Cut roast in half – save 1/2 for the Beef Onion Pepper Stir Fry
slice in strips – place in crock pot and pour BBQ sauce over.
Cook on high for 6 hours
Remove and shred with two forks, then place back in crock pot to keep warm.
We like to make big juicy sandwiches on buns and have some tater tots and coldslaw. All the grands love this meal.Beef Onion Pepper Stir Fry
This one is super easy and one that we love.
Cut roast into cubes
cut 1 onion into large strips
cut 1/2 red, green, orange & yellow bell peppers into thin strips
2 cloves minced garlic
Saute all together in large skillet with small amount of olive oil and butter.
When tender serve over rice or egg noodles
Garnish with some green onionThis is a meal that I find everyone likes and it is so easy to do. Total cooking time about 20 minutes.If you need something sweet in a hurry, I love these little mixes. I usually find them on sale for $1 and so perfect for 6 muffins.I made a naked cake the other day and had some pineapple coconut almond frosting left over in the fridge, it paired really good with the muffins. Looks like I worked for hours and this took 14 minutes.
