As the temperatures heat up, I start to think about cool meals and one of my favorites is this easy Summer Chicken Pasta Salad.
This salad is so easy, one of those you can make from items mostly in the pantry.
Cook pasta and then chop hard-boiled eggs, onions (red onions look prettier, but I didn’t have any), tomatoes, and sliced olives. I used 2 cans of diced chicken breasts, 1/3 c. feta cheese and mixed all in with the cooled pasta. Drizzle with vinaigrette dressing, cover, and place in the fridge to chill thoroughly. (my favorite is to add a little milk to some low-cal ranch dressing and use that to drizzle over the pasta. )
This is one of those salads where you can clean out the refrigerator and add in bacon bits, radishes, cucumbers, carrots and any other veggies you have left over.
Oh, that looks so good! One thing I love about summer is salad and sandwiches.
