Christmas Morning Breakfast – Easy Bacon Quiche

If your family is like mine, the first place they go on Christmas morning is to the kitchen for a cup of coffee, then off to the living room to see what all Santa left under the tree.  Once all the presents are opened, they are starving and want something to eat.  We are a bacon and egg family, so my Christmas Morning Breakfast – Easy Bacon Quiche is always a favorite.

This is such a simple dish to pull together.  I am sure you probably have all the ingredients on hand at all times.  This is one that only takes a few minutes to make and then it is in the oven while you open Santa.

I cheat and use a ready-made pie crust.  These are really good and take all the fuss out of a hurry-up breakfast.

Next, you just whip up some eggs and add all your other ingredients in one bowl and mix well.  Pour it all into your pie crust and pop in the oven.

How easy could that be?  Here is my favorite recipe, but remember you can all kinds of vegetables if you like.  Maybe some chopped green pepper, or some chopped broccoli, or anything at all that sounds good to you.

Easy Bacon Quiche

6 eggs – beat well
1 c. milk
1 c. shredded cheese
1/2 c. chopped onion
1/2 bottle real bacon bits + enough to garnish the top
1 ready to bake pie crust

Preheat oven to 400.  Beat all ingredients together well and pour into pie crust.  Bake @ 400 for 15 minutes. Reduce heat to 350 and continue baking for 25 to 35 minutes.  The top will brown slightly and a knife inserted in the center will come out clean.  Let stand for 10 minutes.  Slice into pie wedges and serve with your favorite side.  (I love a side of fruit for breakfast or lunch and a salad for dinner.)

Libby’s Banana Bread
1 1/2 c. sifted flour
1/2 tsp. baking soda
1/2 tsp baking powder
1/4 tsp. sale
1/2 c. butter
1 c. sugar
2 eggs
1 tsp vanilla
grated rind of half a lemon
3/4 c. mashed ripe bananas
2 tbs. sour cream
1/2 c, chopped nuts (optional)

Sift together flour, baking soda, baking powder, and salt.  Set aside.  Work butter until soft, then work in sugar a little at a time until smooth.  Beat in eggs one at a time, add the vanilla, grated lemon rind, and bananas.  Stir in flour mixture alternately with sour cream. Pour into a greased loaf pan & bake in a preheated 350-degree oven for 1 hour, or until a toothpick comes out clean.  Remove from pan & cool on a rack.  I love mine glazed with a mixture of conf. sugar and a little milk.

Best Pumpkin Bread Ever – Really 

4 1/2 c. sugar
1 1/2 c. oil
6 eggs
2 1/2 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
3/4 c. water
3 tsp. soda
3 c. pumpkin (1 large can)
5 1/4 c. flour
1 1/2 c. nuts (optional)
Mix all ingredients together as given.  Bake in 3 well-greased loaf pans at 350° for l hr. and 20 min. or until knife inserted in center comes out clean.

    Try making that same quiche in a graham cracker pie crust. The sweet/savory mix is amazing! I’ve been making that recipe for Christmas for the past 46 years and two generations still ask for it.
