Bake A Special Treat For Mother’s Day

Bake A Special Treat For Mother’s Day.  Since Peaches are in season at the moment, I love to take advantage and make one of my all-time favorites.  The Best Old Fashioned Peach Cobbler ever.  It’s not one of those pie crust types or a crumble, but an old-fashioned – like grandma used to make Peach Cobbler.  Perfect for a Mother’s Day gathering.

So simple and so easy.   Preheat oven to 350.

Pick out about 8 of the nicest yellow peaches you see at the grocery.  Peel them and cut them up into chunks.  This should make about 4 cups.

Place the peaches with 1 cup sugar and 1/2 cup water into a saucepan, stir together well – bring to a boil and simmer for 10 minutes,

Cut 1 stick of butter into cubes and put it into a 3-quart baking dish.  Place into the oven to melt.

In the meantime mix 1 cup sugar, 1 1/2 cups self-rising flour, and 1 1/2 cups milk slowly to prevent clumping.  (Tip- add 1 1/2 tsp baking powder and 1/4 tsp salt to 1 cup regular flour to make self-rising flour)

When the butter is melted take it out of the oven.

Slowly pour the flour mixture on top of the melted butter evenly all over the dish.  DO NOT MIX. It will look like a mess. Don’t Stir.

Spoon the peach mixture all over the melted butter-flour mixture and then gently pour the syrup in the pan over all the peaches.

Place in the 350-degree oven and bake for 35 to 45 minutes until the top is firm and brown. (Top should not be crusty – just firm)

Serve warm with ice cream if desired, or chill and serve cold.  It is delicious no matter how you serve it.

This is the perfect dessert to make for a large crowd, so easy to make and everyone will rave about how good it is.

Just can’t eat anything like this anymore. Looking for a much healthier option. All that sugar? Isn’t there something we could do with those wonderful fresh fruits of all kinds? That don’t involve all that flour, sugar? No artificial stuff, either?
