Dinner In A Hurry – Black Angus Potato Soup.  This time of year it seems like the family is always in a hurry.  So many activities for the kids and so many demands on the adults to keep it all afloat.  Dinner time is one of the things I look forward to each day, but putting together a great meal in a hurry isn’t easy.  With the weather getting cooler all over the country, some great belly warming comfort food is always a winner.

Potato soup is always a favorite.  We are a potato family to begin with.  We have potatoes most every meal – fried, mashed or baked.  It’s just one of our favorite sides.  So a nice big pot of Potato Soup, some warm sourdough bread and that is a fabulous meal to us.

Black Angus Baked Potato Soup

This soup is hardy and makes a deliciously filling meal!

Ingredients

  • 4 large baking potatoes
  • 2/3 cup butter or margarine
  • 2/3 cup flour
  • 6 cup milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 4 green onions -- chopped and divided
  • 12 slices bacon -- cooked and crumbled
  • 1 1/4 cup cheddar cheese -- shredded and divided
  • 8 ounces sour cream

Instructions

  • Wash, dry and prick potatoes with fork. Bake potatoes. (I wrap mine in wax paper and then bake in the microwave.  4 potatoes on high for 12 minutes and they are done. ) Let cool. Cut into half lengthwise and scoop out pulp; set aside. Use skins for something else, such as stuffed potato skins. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add potato pulp, salt, pepper, 2 Tbsp. green onion, half the bacon and 1 cup cheese. Cook until thoroughly heated. Stir in sour cream to taste.   Add extra milk if necessary for desired consistency. Serve with remaining green onions, bacon and cheese.  Makes 6 really hearty servings.

        I haven’t ever frozen it. My family always eats it all so there is never any left. I suppose it will freeze just like any other cream soups. Marty

          Thanks! Just finished making it and it is so good. We will enjoy it this evening, even though it’s 76 degrees here.
