Family Favorite 10 Bean & Ham Soup

Since the weather has cooled down, I am loving cooking up some of my favorite comfort food recipes.  Soup is always comfort food to me and I love this wonderful hearty soup.    This is the kind of dish you can cook in the crockpot or simmer slowly on the stove.  Either way, the house will smell amazing.  Add some hot bread and this is a meal your family will love.  This Fabulous 10 Bean & Ham Soup will take the chill away from these cold days and have your family asking for seconds.

Fabulous 10 Bean & Ham Soup

3 cups dry 10 bean soup mix – ( I get mine from Sprouts in their bulk dept.)
2 carrots diced
1 1/2 onions diced
3  stalks celery diced
1 tbl. minced garlic
1tbl. ground pepper
1 ham hock (I used the leftover bone from our Christmas Ham)
salt to taste

Cover with about 1 1/2 inch of water and bring to a boil.  Lower heat and simmer 3 to 5 hours until beans are tender.  (Check often to make sure you still have plenty of water.  As the beans cook and absorb the water, you will need to add more. Should be soupy, not dry)  When beans are done, remove ham from the hock, dice and mix in the soup.

I also found a great bean mix at Walmart.  Their 10 Bean bag is a great mix also.
