Father’s Day – May Pinterest Challenge. There is nothing like all the fathers in our lives. My father was the best, I miss him so much. He always treated my sister and I like queens. That is how I tried to raise my two sons, to treat their wives like queens. I am blessed to see that they have raised their sons to treat me, their mom, and all ladies like queens too. Father’s Day is right around the corner. Time to show them how much we love them.
Each month we are given an inspirational photo that our hostess Cyndi @ County Road 407 found. The one this month is from Giggle Living. She shares a photo of a special buffet she planned for the amazing Father in her life. This year our Father’s Day will be small. I will put fresh flowers on the grave for Jim and my son Chuck. I am planning a special treat for my youngest Son Kent. His son and family live in Nashville, so he won’t be with them today, I plan on spoiling him just a little. A quiet day around the pool and then dinner poolside.
Since I just cleaned the BBQ, I think I will do a simple meal that I know he will like.
Chicken is one of his favorites and anything spicy is even better. I think I will make some Chicken Kabobs.
Kent loves anything spicy, so I am going to mix up a great marinade for the chicken. Some orange juice and Habanera, Lime, and Tequilla seasoning. Cut up the chicken into cubes, then sprinkle generously with the spice mix. Place in a plastic bag and add a small amount of orange. Place in fridge until ready to assemble the kabobs. I am using onion, bell pepper, and chicken. He likes things simple.
These are so easy to put together. I like to use the metal skewers for the BBQ.
Once they are both done, I like to sprinkle on a small amount of the spice again. I’ll cover them with saran and keep them in the fridge until time to cook.
Of course, he deserves a special dessert too, so I’ve made him his favorite pie. Easiest Pie Ever – Really.

Chicken kabobs sound delicious… It would be so nice to be able to take a quick swim before dinner and then just cool off afterwards… Lovely! Yum, your kabobs look delicious! I always forget to make those; they’re an all in one meal. So sorry you will be missing your hubs & son, but glad for your time with your son.
Marty, you are such a thoughtful and loving mom. The kabobs and pie look delicious! I am so sorry that you will be missing Jim and Chuck, but am happy to hear that you had this enjoyable celebration with your son, Kent. Thinking of you.
