I love all the fabulous fruit that summer has to offer. I think I always eat my weight in Watermelon and Cantaloupe. Then there is all the wonderful Berries, Grapes, and those fabulous Peaches, Nectarines, and Plums. Oh my goodness, I can’t seem to get enough. While we still have some of these treasures in the grocery, I have been on a wild baking spree Cooking With Summer Fruit.
I love Peaches, one of my family’s favorites, so Pies, Cobblers, and Tarts have been on the menu regularly. Today I made a Peach Pie, so easy and this recipe is to die for.
This is such an easy pie to make. Place one crust in the bottom of pie pan and crimp the edges. Set aside.
Prepare the peaches. Peel and slice them into thin slices – Add spices and mix well.
- 5 cups sliced peeled peaches – 2 tablespoons lemon juice
- 1 cup white sugar – ½ cup all-purpose flour
- ½ teaspoon ground cinnamon –¼ teaspoon ground nutmeg
- ¼ teaspoon salt –2 tablespoons butter
Place in prepared crust.
Cover with second crust, crimp to seal edges together. Place in 450 preheated oven for 10 minutes, then reduce heat to 350 and cook an additional 30 to 35 minutes. You should see the piece juice bubble through the slits of the pie crust.
I also love that fall is around the corner and we will have tons of apples to choose from. You might want this recipe too for those cool weather treats.
