My Favorite Cool Weather Meals

With all the changes in my world lately, cooking has been on the back burner.  Neighbors and family have provided so many fabulous meals, I have enjoyed all of them and the luxury of not cooking.  Now it is time to get back into cooking and making some of my favorite comfort foods.   We have had the hottest summer ever in history here in Phoenix.  It has been a real scorcher for sure.  The temps are finally down to the lower 100’s and for us, that is a real blessing from all the 110s and higher.  

I have always loved soups, and they always make me think of home and all the family gathered around the table.  Here are a few of my all-time favorite recipes. 

Black Angus Baked Potato Soup

Black Angus Baked Potato Soup

This soup is hardy and makes a deliciously filling meal!

Ingredients

  • 4 large baking potatoes
  • 2/3 cup butter or margarine
  • 2/3 cup flour
  • 6 cup milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 4 green onions -- chopped and divided
  • 12 slices bacon -- cooked and crumbled
  • 1 1/4 cup cheddar cheese -- shredded and divided
  • 8 ounces sour cream

Instructions

  • Wash, dry and prick potatoes with fork. Bake potatoes. (I wrap mine in wax paper and then bake in the microwave.  4 potatoes on high for 12 minutes and they are done. ) Let cool. Cut into half lengthwise and scoop out pulp; set aside. Use skins for something else, such as stuffed potato skins. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add potato pulp, salt, pepper, 2 Tbsp. green onion, half the bacon and 1 cup cheese. Cook until thoroughly heated. Stir in sour cream to taste.   Add extra milk if necessary for desired consistency. Serve with remaining green onions, bacon and cheese.  Makes 6 really hearty servings.

This will become a family favorite for sure and your guests will love it too.  

 

                                                Ten Bean & Ham Soup

10 Bean Soup

This will become your family's favorite soup.  Beans of every kind combine to create the perfect comfort food. 
Prep Time15 minutes

Ingredients

  • 3 cups dry 10 bean soup mix - I get mine from Sprouts in their bulk dept.
  • 2 carrots diced
  • 1 1/2 onions diced
  • 3  stalks celery diced
  • 1 tbl. minced garlic
  • 1 tbl. ground pepper
  • 1 ham hock
  • salt to taste

Instructions

  • Cover with about 1 1/2 inch of water and bring to a boil.  Lower heat and simmer 3 to 5 hours until beans are tender.  (Check often to make sure you still have plenty of water.  As the beans cook and absorb the water, you will need to add more. Should be soupy, not dry)  When beans are done, remove ham from the hock, dice and mix in soup. 

Notes

Serve with hot bread for a fabulous 1 dish meal.

Chicken Soup – Good For The Soul 

Chicken Soup - Comfort Food For The Soul

Everyone's favorite comfort food.  This is a really easy to put together soup that will feed your soul.

Ingredients

  • 2 chicken breasts diced or any chicken thing you have
  • 1 carton chicken broth you can also use the granules to make broth
  • 2 cups water
  • 2 carrots peeled and diced
  • 4 stalks celery diced
  • 1 onion diced
  • 1 lb. pkg. noodles

Instructions

  • Put broth and water in large pot with diced chicken, bring to a boil and simmer for approx 1 hr. or until chicken is tender.
  • Add the carrots, celery and onions and cook until tender.
  • Add the noodles and cook until done.
  • Season with salt and pepper as desired and enjoy.

Notes

Serve alone or make a meal with a salad and hot bread.

 

 

 

 

Give these recipes a try.  I think we could all use a little comfort food right about now.

    Thanks for posting the soup recipes. They all sound so good. I have missed your postings but I understand the reason. Be kind to yourself and do what you must to continue each day. I tell myself each morning. This is the day that the Lord has made. Rejoice in be glad in it. I know you have a strong faith and just let Jesus carry when you can’t walk on your own.     Thoughts are with you on your journey, Marty. My husband passed at age 33. It is a very personal journey.

    The soups all sound wonderful. I found a chicken noodle recipe a few months ago and I lost it. A bunch of fresh thyme was added to the crock pot where I created mine. It was so wonderful. We will try these this winter. We have a touch of winter yesterday and today. Light snow but very cold temps. Going to be 56 tomorrow, 70 on Saturday and 80 on SONday. Right now it is in the 30’s. But we have four fires here in Colorado so this is a small blessing.
