July Pinterest Challenge

Peaches are the most wonderful summer fruit.  They are so healthy and have the sweetest taste.  You can eat them raw, chop them up in salads, or your cereal or make an amazing smoothie with them.  My favorite is to do all of the above and more.  Peaches are the subject of July Pinterest Challenge.

Our inspiration this month comes from OrganicFacts.  They share all the nutritional and healthful benefits of this wonder fruit.  I have been eating my weight in them all summer.

If you are coming over from Decor To Adore, I am sure you loved Laura’s take on our Peach Inspiration.  Her salad sounds sooooooo good.

I love a good old-fashioned Peach Cobbler.  The kind your grandma used to make, so that is the recipe I would love to share with you today.

The Best Old Fashioned Peach Cobbler ever.  It’s not one of those pie crust types or a crumble, but an old-fashioned – like grandma used to make Peach Cobbler.

So simple and so easy.   Preheat the oven to 350.

Pick out about 8 of the nicest yellow peaches you see at the grocery.  Peel them and cut them up into chunks.  This should make about 4 cups.

Place the peaches with 1 cup sugar and 1/2 cup water into a saucepan, stir together well – bring to a boil and simmer for 10 minutes,

Cut 1 stick of butter into cubes and put it into a 3-quart baking dish.  Place into the oven to melt.

In the meantime mix 1 cup sugar, 1 1/2 cups self-rising flour, and 1 1/2 cups milk slowly to prevent clumping.  (Tip- add 1 1/2 tsp baking powder and 1/4 tsp salt to 1 cup regular flour to make self-rising flour)

When the butter is melted take it out of the oven.

Slowly pour the flour mixture on top of the melted butter evenly all over the dish.  DO NOT MIX. It will look like a mess. Don’t Stir.

Spoon the peach mixture all over the melted butter-flour mixture and then gently pour the syrup in the pan over all the peaches.

Place in the 350-degree oven and bake for 35 to 45 minutes until the top is firm and brown. (Top should not be crusty – just firm)

Serve warm with ice cream if desired, or chill and serve cold.  It is delicious no matter how you serve it.

This is the perfect dessert to make for a large crowd, so easy to make and everyone will rave about how good it is.
