Who Cooks When It’s 118° – Chicken Pasta Salad

The heat wave just continues and gets worse.  We hit 118°  the othe day and have been over 110°  for what seems like forever.  This summer was slow to start, then it just slammed us.  No warm up period, just right to the really hot stuff.  There is no way I want to cook when it is this hot.

Thank the Lord for our wonderful little pool, that is the only way you can be outside with these temps.  When we come in I just want something light and good.  This is one of my favorite go to salads.

Chicken Pasta Salad

This is the kind of salad where you clean out the fridge and add anything you have leftover.

1 can Chicken Breast meat

1 box Bow Tie pasta

chopped tomato

chopped lettuce

chopped onions

Dressing

Cook the pasta and drain well.  Put in the fridge to cool, then add the chicken and chopped onions and tomatoes.  Take 1/2 cup ranch dressing and dilute with milk to a really thin consistency.  Pour over salad and mix well.

This is where you clean out the fridge.  I had some leftover sliced olives, green onions, hard boiled eggs and bacon so I added them to the salad.  I serve it on a bed of shredded lettuce drizzled with a little more dressing as a meal, or leave it plain as a side dish. 

So easy and such a light and filling meal sure to please anyone.
