Such A Mess But Worth It

I always, always think that I am a really clean cook and that I wash things up as I go and never make a mess.  Well, the proof is in the pudding.  I had some bananas that I wanted to use up and make some Banana Bread, so I pulled out all the ingredients and started in.  When I put the two loafs in the oven and turned around, this is what I saw.

This is not the kitchen of a person who cleans as she goes.  I got so wrapped up in all the mixing, measuring and sifting that I just had one huge mess.

You can’t see it all, but apparently I sifted quite a bit of flour onto the counter instead of the bowl.

I didn’t even put any of my ingredients away when I was through with them.  This is so not like me, or maybe I am messier than I think.

Ok, in the oven to bake for an hour so I cleaned up the kitchen.  I had batter dripped all over the counters and egg shells in the sink plus dirty spoons.  I rinsed everything and put it all in the dishwasher.

Just look at this gorgeous bread.  So worth the mess.

This is one of the best recipes I have ever tried, so moist and sooooooooo good.  (I think it’s the secret ingredient of sour cream.)

                                              Libby’s Banana Bread
1 1/2 c. sifted flour
1/2 tsp. baking soda
1/2 tsp baking powder
1/4 tsp. sale
1/2 c. butter
1 c. sugar
2 eggs
1 tsp vanilla
grated rind of half a lemon
3/4 c. mashed ripe bananas
2 tbls. sour cream
1/2 c, chopped nuts (optional)

Sift together flour, baking soda, baking powder and salt.  Set aside.  Work butter until soft, then work in sugar a little at a time until smooth.  Beat in eggs one at a time, add the vanilla, grated lemon rind and bananas.  Stir in flour mixture alternately with sour cream. Pour into a greased loaf pan & bake in a preheated 350 degree oven for 1 hour, or until a toothpick comes out clean.  Remove from pan & cool on a rack.  I love mine glazed with a mixture of conf. sugar and a little milk.
