July Budget Friendly Recipes.

Budget Friendly Recipes. Welcome, my friends and I are sharing some of our favorite summer recipes. I am sure you will find a few you would love to have in your recipe box.  This was a series I did a few years ago, so I thought I would repeat these amazing Summer Recipes with you.  They are some of my favorites.

One of my favorite summer meals is Dinner Quiche.  Light and easy for hot days.

I love a fast easy meal and Quiche is a really fast meal, plus you can add all kinds of things to make it a really filling dinner dish.  I know I have shown this recipe before, but it is perfect for these really hot summer days.

 


To make this quick and easy, I start with a roll-out pre-made crust from the grocery, then gather all of my ingredients together.  A glass of wine is great while you are mixing everything together.

This is the recipe for a basic quiche, you can add all kinds of other ingredients.  I like to clean out the fridge and see what all I can add.

I first whip the eggs and milk until they are frothy.  Today I had some broccoli and bell pepper that I wanted to add.  I chopped them really fine, then added the cheese and bacon bits. (I also use the jar bacon variety, this makes it really simple and fast)

Once everything is all mixed together, I pour it into my pie shell.

Bake as directed on the basic recipe and then let cool for about 5 minutes.  Slice and serve with a green salad for a perfect dinner.

 

Great for a quick and healthy lunch or a light Sunday dinner.

Easy Summer Dinner Quiche

Ingredients

  • 1 Pie Crust
  • 6 eggs
  • 1 cup milk
  • 1/2 cup bacon bits
  • 1/2 cup diced onion
  • 1/2 cup diced green pepper optional
  • 1 cup shredded jack cheese

Instructions

  • I first whip the eggs and milk until they are frothy.  Today I had some broccoli and a bell pepper that I wanted to add.  I chopped them really fine, then added the cheese and bacon bits. (I also use the jar bacon variety, this makes it really simple and fast)
  • Bake at 400 degrees for 15 minutes.  Reduce heat to 350 degrees and bake for an additional 25 to 35 minutes - until center is solid
