Sometimes I just crave some good old fashioned country cooking and a hearty stick to your ribs meal, but with these really hot temps, I just can’t see turning the oven on or watching a pot on the stove all day. That’s why I love my crock pot so much. Perfect for these kind of days.
I can play all day and come home to a big pot of Vegetable Beef Soup. Comfort food at it’s best.
I make mine really simple – – –
I don’t measure, I just fill up the pot
Potatoes Diced in medium chunks
Onion Diced in medium chunks
Baby carrots – however many you want
Celery – 2 large stalks chopped
Big package of stew meat – ( I want lots of leftovers – So good the second day )
Pepper to taste
Garlic salt to taste
Bay leaf
Fill pot with 1/2 water and 1/2 beef broth ( You can use the beef crystals too and all water.)
Sometimes I add a pkg. of dried Onion Soup Mix.
Turn on high to start and when it bubbles, turn down to low and let it cook all day. SOOOOOOOOOOOOOO GOOOOOOOOOOD.
Just add a salad and a hot biscuit and you are ready to enjoy. Good for you and low calorie too.
